3/4 cup raw cane sugar (any dry sugar will work)
1/4 cup honey
1/3 cup kelp flakes (ground small in coffee mill)
1 to 2 Tablespoons water
1 cup raw sesame seeds
Place sugar, honey and water (start with 1 Tablespoon water and add more if needed), into a small 1 and 1/2 quart saucepan.
Heat on medium heat and stir until smooth.
Add kelp and sesame seeds.
Cook and stir until mixture turns a caramel color, about 5 to 8 minutes.
If you have a candy thermometer, the temp should be at 300 degrees F.
Or check by dropping a small amount of mixture into a cold glass of water.
If it separates into threads which are hard but not brittle it's ready. Take off heat.
Quickly pour the mixture onto a parchment paper or oiled cooking sheet. Once cooled and hard (15 to 20 minutes), break into pieces.
